Goan food is heavily influenced by the Portuguese and a traditional Vindaloo is more about the vinegar ("vin") , the garlic ("ahlo") and great flavour than the mind-numbing heat that it's become famous for in recent year. We've taken it back to its delicious roots by concentrating on those flavours, rather than the heat, leaving you to chilli it up to your heart's content, should you wish.
