How to Prepare this Red Lentil Dahl

1 Soak lentils for 10 mins
2 Heat ghee or butter in large saucepan (medium heat) and sweat onions, garlic, chilli and ginger together
3 Next this pack - fry for 3 mins
4 Add tomatoes, sugar & coconut milk. Simmer & stir for 10 mins
5 Rinse lentils & add to pot. Simmer, adding stock bit by bit. Occasionally stir to prevent sticking. Cook on medium heat for 15 to 20 mins.
6 Stir in lime, sprinkle with coriander & serve… simple!

Serving suggestion:

Serve with mounds of Indian Basmati rice and riata or Indian breads.

Remember:

This recipe has been tried and tested by the Green Saffron Masaalchi and is pretty much guaranteed, but if you want to change the quantities of a couple of ingredients go for it….experiment and enjoy your cooking. With Green Saffron spices you can’t go wrong!

Ghee is an Indian butter. You can simply use butter or vegetable oil instead.
