Cassia is a member of the cinnamon family, and is often sold as cinnamon in North America. It is broadly similar to "true cinnamon", a little more robust in texture and flavour and more suited to savoury dishes. It is highly aromatic and manages to be both sweet and bitter with warming overtones.
