Black Cardamom should not be confused with Green Cardamom. It has an altogether more robust and smokey taste and aroma - slightly reminiscent of camphor, and one is no substitute for the other. It is often one of the spices that makes up Garam Masala. It can be ground or added whole to dishes.
We select ours for freshness and pungency. An important part of the flavour comes from the drying process, so it is vital that this is done properly.
Note: unless a recipe specifically asks for 'black' cardamom, it is most likely referring to the green variety.
