The 'Indian Bay Leaf', or Tejpat, is distinct from the Mediterranean or Laurel bay leaf commonly used in Western Cooking. It is larger, with three veins running down its length and the flavour is altogether different. It infuses food with a delicious cinnamon like flavour whilst its aroma brings to mind lemon and pine.
