After three years of producing our award winning, classic pudding and in response to the wealth of inquiries, we’re delighted to announce the launch of our Gluten Free Christmas Pudding.
Exchanging the flour and breadcrumb mix for a blend of rice flour, buckwheat, tapioca starch and potato starch, increasing the amount of ‘Prune Tea’ – prune soaking juices and green tea - adding a little more butter and a couple more Irish free range eggs has done the trick. This Gluten Free pudding is superbly moist and equally as flavoursome as our ‘Classic’ award-winning pud!
The best news? We received a laboratory analysis from the ‘Public Analyst Laboratory’, Limerick confirming its Gluten Free status. The standard is 20 parts per million (ppm) to 10 ppm of gluten trace and a product is classified as low Gluten. Below 10ppm and the product is regarded as Gluten Free. The Green Saffron puddings came in as 1ppm!! The scientist remarked that this was ‘exceptional’! We are thrilled! Green Saffron Gluten Free, certified, Coeliac Puddings to the world!
Furthermore, the Coeliac Society of Ireland will be featuring our puddings in their ‘Gluten Free Christmas Goodie List’, as a recommended item.
