My Taiji's (Aunt’s) recipe combines the searingly high notes of green cardamoms and pungent black pepper fresh from Kerala. Middle ground is provided by pink mace, coarse cumin and warming cinnamon, with support from star anise, cloves and nutmeg for real depth of flavour. Beautiful in a curry base, sprinkled on a curry or in a riata and a gently exotic lift when added to any sauce, marinade or soup. A sweetly aromatic zing of a spice blend. Fantastic for any occasion!
