Tikka - Arun's easy recipe

Serves 6 people

Marinade Ingredients:

6 large cloves of garlic, grated

90g, 3 fat inches of ginger, grated with skin on

300ml, ½ pint natural, plain or Greek yoghurt

Spices1: Freshly grind 2 tsp cumin seeds, 1tsp black peppercorns, then add 3 tsp Garam Masala

1tsp sea salt

½ lemon, zest and juice

2 tblsp sunflower oil

1 kg, 2 lb of chicken thigh meat, chopped to chunky dice

Sauce Ingredients:

60g, butter or 3 tbsp vegetable oil

450g, 1 lb onions, chopped

6 large cloves of garlic, grated

30g, 1 fat inch of ginger, grated with skin on

Spices2: Freshly grind 2tsp coriander seeds, 5 green cardamom pods, 4 cloves then add 2tsp turmeric, 1 scant tsp chilli flakes

2 tins, 800ml of chopped tomatoes

1 dst sp sugar (this helps bring out the spices)

1 tsp sea salt


  1. Combine all the Marinade ingredients, mix well, cover with a damp tea towel and set aside for ideally two hours or for just as long as you can
  2. Heat the butter or oil in a large casserole dish or saucepan on medium heat.
  3. Next, add the chopped onions, garlic and ginger and sweat until soft.
  4. Then add the Sauce Ingredient Spices, stir to combine, then add the tomatoes, sugar and salt, turn down the heat to a medium simmer and cook for about 20 minutes.
  5. Remove from the heat and whizz this spicy tomato sauce in a processor, liquidiser or with a hand blender until smooth (or as smooth as you like)
  6. Put the pan back on the heat, set to high, add the chicken and all its marinade to the tomato sauce, stir well to combine the two.
  7. As soon as you begin to see the first bubbles appear, turn the heat down to medium low, cook for about 20 minutes (stirring occasionally) until the chicken is just cooked. Simple!
  8. Remove from the heat, serve with aged basmati rice and a *fresh fruity riata.

*Pomegranate, Mint Riata

Mix, 200ml crème fraiche, 50ml plain yoghurt with the seeds and juice of half a pomegranate, some chopped fresh mint and a squeeze of lime juice.
