    Kurry Kids Lunchbox Frittata

    Curried ‘Kolkata’ egg roll

    This is a good, easy and slightly quirky way to make your make children the envy of the lunchtime dining room, whilst at the same time making a delicious nutritious meal. This recipe is written to make 2 rolls, but you could just make one big frittata disc and cut it into wedges. (For a more grown up version of this recipe, check out Arun’s book, ‘Fresh Spice’ in the Egg and Cheese chapter.)

    Chips & Curry Sauce

    crisp sweet potato, Korma sauce 

    My take on the classic midnight snack and still relatively healthy! The sweet potato wedges work so well with the south Indian spice in the sauce and yet so simple! I’d recommend you make your ‘sweet potato chips’, then whilst they’re in the oven you can get the wonderful sauce made, put the two together and serve. Enjoy!

    Breakfast Kedgeree
    Basmati rice, fresh spice, fish & egg

    This is a wonderfully satisfying, yet surprisingly light dish perfect for breakfast or any little snack. Based on the Indian ‘kheari’ (pronounced “kitsch er ree”) dish of lentils and rice this, as my father says, “can’t be simpler, just a little rice, lentils and bit of ‘haldi’ (turmeric)”. With the colonial-influenced addition of smoked fish and eggs, it can be as hearty as you want to make it. Here, I’ve concentrated on fresh, flavours, unctuous eggs and delicately sweet, fluffy rice.
