Pilau Rice

Serves 4 - 6 people

Ingredients

½ medium onion, finely diced
1 dst sp ghee, butter or a splash of vegetable oil
2 cups of Indian basmati rice, washed thoroughly and drained
4 cups of hot water, vegetable or meat stock
Good pinch of saffron, or 1 tsp turmeric powder
2 tsp GREEN SAFFRON Garam Masala (optional)
Good handful of coriander and, or chives, finely chopped

How to make the rice dish

Firstly, turn on your oven to 180ºC or Gas Mark 4 to ‘pre-heat’ it

  • Melt the ghee in a casserole dish over a gentle heat, then add the onion and sweat until it’s good and soft
  • Tip in the washed, drained rice and stir around for a minute or two, coating all the grains with the melted ghee, butter
  • Then, pour the hot water (or stock) into the casserole, sprinkle in the saffron (or turmeric) and GREEN SAFFRON Garam Masala (if using), give it a quick but gentle stir
  • Cover the casserole dish with a tight fitting lid or tin foil and place on a middle shelf in your pre-heated oven.
  • After 10 - 15 minutes check the dish see if all the liquid has been absorbed
  • NB - If there’s still some liquid remaining, return the covered casserole dish to the oven and give it a couple more minutes until all the liquid has finally been absorbed

  • Remove from the oven, take off the lid or gingerly rip off the foil, fluff gently with a fork, sprinkle with the coriander and chives and serve immediately…simple!

Serving suggestion

Serve with any of the delicious GREEN SAFFRON wonder curries and riata.

Bonus Hints

  • 1 cup of uncooked rice should satisfy 3 people or 2 hungry people, (when you’ve cooked it!).
  • 1 cup of uncooked rice roughly expands to 2 cups of cooked rice.
  • You can wash the uncooked rice by pouring it into a fine sieve, placing it under the cold water tap and running cold water through it, gently shaking the sieve until the stream of water in the sink is no longer cloudy but, clear!
  • If you don’t want to use the Garam Masala, you could put in a couple of lightly crushed whole green cardamom pods and 2 or 3 cloves instead.

Remember

This recipe has been tried and tested by the Green Saffron Masaalchi and is pretty much guaranteed, but if you want to change the quantities of a couple of ingredients go for it….experiment and enjoy your cooking. With Green Saffron spices you can’t go wrong!!!
