Chai

A comforting, reviving drink drank throughout the day and night in India. Traditionally, Chai is a sweetly spiced, milky amalgam cooked in a pan on the hob – Brahma’s Nectar! We’re giving a couple of suggestions how you could make it at home, but just play around with it until you get the result you’re happiest with. Milk, no milk, sugar, no sugar….whatever you’d prefer. Flavour and aroma are what we’re bringing, the how and the where is over to you…!

Chai chahiya?

Would you like a cup of tea?

Ingredients:

1 Packet of Green Saffron Chai Spice blend
1 pt water
1 pt full fat milk (organic if possible. SOYA milk is equally delicious)

How to put it together:

In a pan on the Hob

  • Pour 1 pt of milk, 1 pt of water and 4 heaped teaspoons of your Green Saffron Chai Spice blend into a pan (or 2 pt of water if you don’t want to use the milk)
  • Place the pan onto a high heat, stir and to the boil.
  • As soon as it comes to the boil turn down the heat and allow to simmer for a few more minutes, 10 to 15mins or until the aromas fill your kitchen…

    N.B. The longer you leave your Chai simmering the darker and creamier the drink becomes. It’s purely a matter of adding your own style or touch. After a couple of goes you’ll have it down.

  • Take off the heat and strain through a sieve into a mug, cup, serving jug, whichever you prefer.
  • Drink, savour, enjoy…..Serve with ‘Green Saffron’ Garam Masala Cookies!

Using a teapot

  • Boil the kettle (!)
  • Rinse your teapot with a little boiling water from the kettle, then pour the water away
  • Put 4 heaped teaspoons of your Green Saffron Chai Spice blend into your teapot (based on an average sized 2pt teapot).
  • Pour boiling water onto the Green Saffron Chai Spice blend in the teapot, give it a quick stir and leave to steep for 5 to 10 mins
  • Then, strain the aromatic tea through a sieve into a mug, cup, serving jug, whichever you prefer.
  • Add milk (if you want to), drink, savour, enjoy….Serve with ‘Green Saffron’ Garam Masala Cookies!
